First, we prepare the filling chopping the onion, the garlic and the parsley. Clean the mushrooms and cut them in middles. Fry the onion in a saucepan, add the ham and cook them for a minute. Add the lower part of the mushrooms chopped and cook for another minute. Add the Sherry and sprinkle the parsley.
Fill up the mushrooms with the mixture, put them in a saucepan and add white wine and cover it.
