1 kg. of bull’s tail. 1 big onion. 3 carrots. 1 tomato. 1 green pepper. 4 pieces of garlic. Olive oil. 1 glass of wine. Parsley. Salt. Water.
Clean the bull’s tail and macerate it with white wine a few hours before you prepare it. Cut the carrots in slices, cut up the onion, the green pepper, the tomato and the garlic. Put olive oil into a pot and add the rest of the ingredients, the tail and the vegetables. Add wine, salt and parsley, and cover with water. Cook it slowly for 3 or 4 hours.
