Recipe fish with Peppers
1 Kg. of fresh cod (slices). ½ sweet red pepper. 3 or 4 green peppers. 1 spring onion. 4 cloves of garlic. 2 cayenne chilli. Flour. Extra virgin olive oil. 1 glass of water.
In a casserole with a trickle of extra virgin olive oil, fry lightly the green peppers, the spring onion and the cayenne chilli. When this is fried, add the glass of water and let it boil without lid for 20 minutes to reduce. Strain it and keep it back. In a frying pan with oil, fry the cloves of garlic without cutting them and with skin. Immediately afterwards, add the slices of cod, seasoned and floured, fry them during 4 minutes by every side, first with the skin up. Slip and reserve. Put the sauce of green peppers at the bottom of a serving dish or big plate and place on top the slices of cod and the fried garlic. Decorate with the red pepper fried in rings and serve.
