Salmorejo from Cordoba
3 boiled eggs. Cured ham. Bread. 3 big tomatoes. 2 pieces of garlic. 1 glass of olive oil. Vinegar. Water. Salt.
This is a really typical recipe from Andalusia, from the province of Cordoba. Dip the bread into water for half an hour. Then, put the bread, the garlic, the tomatoes, one egg and a glass of olive oil in a bowl. Stir it until you have a cream, and then add salt and vinegar. Keep it into the fridge until you serve it. Sprinkle it with the boiled eggs, the cured ham chopped. Eat it with a spoon.
