Tocino de Cielo (Flan caramel)


17 egg yolks, 1 egg, 1 ½ cup sugar, 1 ½ cup water. Sugar to make caramel


To prepare syrup boil slowly the sugar and the water for about 20 minutes or until it has the right texture. Once ready, cool. Meanwhile, caramelize the recipient: mix 3-4 spoons sugar and the same quantity of water and boil until it forms caramel, and taking care also to include the walls of the recipient. Whip the egg yolks and the egg until homogeneous. Then mix the syrup with the eggs and bake in oven on water bath at medium temperature for one hour. You can also use a pressure boiler for 10 minutes. Once curdled pull out of water bath, cool, place it on a plate and cut it into pieces.
